  • This chapter discusses the determinism of the productivity–composition relation and the determinism of content and composition of major and minor compounds of seeds. It shows that for many crops the genetic increase in yield changes the ratio between major grain components, carbohydrate, protein, and lipid (i.e., yield increase decreases the protein to starch or oil ratios). For many crops, improving yield without a decrease in protein concentration is a priority in the breeding program. The chapter analyzes the determinism of carbon and nitrogen (N) quantities stored in the grains and consequently the determinism of the N concentration. N. W. Simmonds, analyzing the published data on genetic relation between dry grain yields and protein concentration showed a strong negative relation which led to the conclusion that the relation holds approximately over all cereals. Many studies lead to the conclusion that the concentration in micronutrients can be improved in the future.
