This chapter discusses the world of food perception, memory and appreciation. It reviews the development and change of preferences from before birth until old age, refers to psychological theories and findings about short‐ and long‐term changes in liking. The chapter also discusses the mechanisms and factors that determine changes in liking over longer periods. Learning and memory of different kinds play an important role in these mechanisms. Learning and memory are involved in almost all longer‐lasting changes of perception and memory. Incidental learning and implicit memory may indeed rely on different mechanisms than intentional learning and explicit memory. There is essential for the improvement and renewal of the methodology used in food liking and acceptability research. The traditional use of statistics is perhaps the most serious handicap in the progress of sensory consumer science and the understanding of eating and drinking behaviour.
