  • Banana peel has been reported to contain both nutrients and antinutrients contents which have good and bad health effects, respectively. The objective of this study was to assess the changes in total phenolics, β-carotene, antioxidant activities and selected antinutrients at different maturity indexes of Musa cavendishii banana peel. In general, the results showed significant changes (p < 0.05) in all components measured with the changes in maturity of the peel. The highest amount of total phenolics was obtained at index 4 and lowest at index 1. Peel at index 7 showed the strongest free radical scavenging and lowest is at index 4, while index 4 exhibited the highest reducing activity and lowest was at index 1. For β-carotene, index 7 showed highest concentration and lowest at index 1. For antinutrients, saponin and phytate content were found to be the highest at index 7. Both antinutrients were found to increase significantly with the increase of maturity index. In contrast, tannic acid was found to decrease significantly with the increase of maturity index. Highest tannic acid was at index 1 and lowest was at index 7. The information obtained in this study will be useful for the application of banana peel as functional ingredient in food products.
