According to recent surveys, the social and religious landscape of American Jewry is undergoing a remarkable demographic transformation. In New York City, 40 percent of the Jewish population claims to be either Orthodox or ultra-Orthodox, and nationally, 27 percent of Jews younger than 18 reside in households where families observe ritually precise, "torah-true" Judaism, minutely organized around strict adherence to halachic law -- keeping the Sabbath and following the dietary rules prescribed by kashruth (rabbinically sanctioned kosher foods), among many other faith practices.
