• Abstract The overwriting of traditional urban culture is pronounced at the perimeters of China's largest cities. Dynamic modernization is taking place near these perimeters, supplanting older but still-thriving traditional forms. China's city dwellers are mastering modernization. Changes in everyday food culture are observable in the move away from traditional market and product designs and towards a supply industrial regime, as well as changes in the nature of work. In two pilot cases at the community and family level, we see both accommodation as well as some resistance to these changes. I outline parts of a research plan for further observation and reporting of these transitions.
