Supermarkets are an interesting object of study precisely because they have managed to avoid greater scrutiny by government regulators, town planners, environmentalists and nutritionists. A common theme for the multi-disciplinary cast of scholars present in this Symposium concerns the way that modern food systems have become dis-embedded from local agriculture, government oversight, community rituals and eating pleasure. At the same time, supermarkets have been observed busily-re-embedding their operations in space, time, financial markets and communities through a range of industrial supply chain, marketing and social responsibility strategies. The government initiatives described here are beginning to challenge the view that finite consumption is possible and desirable for society.
