• Street market is a subsistence activity for many families of small towns as well as being responsible for local development and main source of food for the population. However, the poor sanitary and hygienic conditions in these establishments are characterized as a risk to public health and meet the current health law in the country. This study aimed to evaluate the sanitary conditions de establishments that sell meat and the hygienic conditions of food handlers and consumers perceptions establishments in the city Paranatama, PE. Interviews were analyzed from the perspective, mainly of BR (Collegiate Directory Resolution) n. 275. It was found that the fairs that offer a risk to public health considering not meet the regulatory codes related to the activity. Consumers realize that the products are exposed to dust and seen, hanging from rusted hooks, there is movement of animal, no water for cleaning equipament. It is concluded that the sanitary conditions of sale of meat instreet markets Paranatama, PE are poor and require urgentaction by the institutionalized power of the municipality. It is necessary to structure the physical standards for the operation of trade and technical training for dealers.
