  • Buckwheat is an important source of bioactive compounds having many interesting pharmacological effects such as antioxidant activity and a stabilization effect on high blood pressure. Buckwheat sprouts, as a new vegetable, have received considerable attention from the sprout market because of their rich content of phytonutrients, including phenolic compounds, proteins, vitamins, and minerals, as well as its soft and slightly crispy texture and attractive fragrance. Here we summarize the research progress of buckwheat sprouts with regard to bioactive components, analytical methods, physiological effects, as well as the exogenous factors used to improve the quality of sprouts. This review highlights a few major recent developments in biotic and abiotic factors mediated by the production of flavonoids, as well as suggestions regarding further investigation.
