Studies on taste acuity and aging have been summarized with a review of the normal physiology of the sense of taste. The number of taste buds decreases with advancing age. Sweet and salt taste sensitivity are usually reported to decline with age. Changes in bitter sensitivity have been correlated with smoking. Denture wearers may complain of a decrease in taste when dentures are worn. Oral hygiene and a decrease in the sense of smell with aging are related to taste acuity. These changes in taste acuity with aging have important implications for nutrition counseling of older individuals.
